This is the only scone recipe you will ever need. Feel free to customize it with whatever mix-ins you have available.

Ingredients:
  • 2 cups flour

  • 1/4 cup sugar

  • 1 tbs baking powder

  • pinch of salt

  • 1/3 cup cold butter, cubed

  • 3/4 cup currants

  • 1 orange

  • 1/2 cup heavy whipping cream (plus more for brushing the tops of the scones)

  • 1 egg

Instructions
  • Preheat oven to 350

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt

  • Add the butter to the flour mixture; Use a pastry blender or two knives to combine it in with the flour mixture

  • Add the currants (or whatever mix-ins you choose)

  • In a separate bowl, whisk together the cream, egg, and zest from the orange

  • Combine wet and dry ingredients

  • Work dough into a disk about 6 inches in diameter and 1 1/2 inches thick (note there will be some flour crumbles left over in the bowl

  • Cut the disk into 8 triangles

  • Place scones on parchment lined baking sheet

  • Brush the tops with remaining heavy cream and sprinkle with sugar

  • Bake for 20 minutes
