Sesame Crusted Chicjen Tenders

Old school cookbooks never miss! These sesame-crusted chicken tenders came from a community recipe book— shout out to West School and Judi Anders for the recipe — and they were a total hit. Crispy, easy, and perfect for tossing over a salad.
Ingredients:
1 pound of chicken breast tenders
1 cup flour
1 tsp black pepper
2 eggs
2 tbs soy sauce
2 tbs water
1 cup panko
1/4 cup sesame seeds
1 tsp paprika
For the sauce…
1 jar of apricot jam
1 clove garlic, minced
1 tbs soy sauce
1/4 cup water
Instructions
Pound chicken tenders until thin
Preheat oven to 350 and line a baking sheet with parchment
Grab 3 bowls
In the first bowl, mix flour and black pepper
In the second bowl whisk eggs, soy sauce and water
In the third bowl, mix the panko, sesame seeds and paprika
Dip each tender in the flour mixture, then egg mixture then panko mixture
Lay out the tenders on the baking sheet as you go
Meanwhile heat olive oil in a skillet
Once hot, fry each tender until the outside is brown and crispy (about a couple minutes on each side)
Lay tenders back on the baking sheet and bake for 25 minutes
To make the sauce whisk together the jam, garlic, soy sauce and water
