Sesame Crusted Chicjen Tenders

Old school cookbooks never miss! These sesame-crusted chicken tenders came from a community recipe book— shout out to West School and Judi Anders for the recipe — and they were a total hit. Crispy, easy, and perfect for tossing over a salad.

Ingredients:
  • 1 pound of chicken breast tenders

  • 1 cup flour

  • 1 tsp black pepper

  • 2 eggs

  • 2 tbs soy sauce

  • 2 tbs water

  • 1 cup panko

  • 1/4 cup sesame seeds

  • 1 tsp paprika

For the sauce…

  • 1 jar of apricot jam

  • 1 clove garlic, minced

  • 1 tbs soy sauce

  • 1/4 cup water

Instructions
  • Pound chicken tenders until thin

  • Preheat oven to 350 and line a baking sheet with parchment

  • Grab 3 bowls

  • In the first bowl, mix flour and black pepper

  • In the second bowl whisk eggs, soy sauce and water

  • In the third bowl, mix the panko, sesame seeds and paprika

  • Dip each tender in the flour mixture, then egg mixture then panko mixture

  • Lay out the tenders on the baking sheet as you go

  • Meanwhile heat olive oil in a skillet

  • Once hot, fry each tender until the outside is brown and crispy (about a couple minutes on each side)

  • Lay tenders back on the baking sheet and bake for 25 minutes

  • To make the sauce whisk together the jam, garlic, soy sauce and water
