Cold Soba Noodle Salad

EASY

Easy, fresh, and packed with flavor, this cold soba noodle salad with mango and peanuts is my go-to for a quick dinner or meal-prep lunch.

Ingredients:
  • 2 cups soba noodles, cooked, drained and cooled

  • 1 - 2 mangos, chopped

  • 1 bunch of green onions, chopped

  • 1/2 cup shredded red cabbage

  • 1/2 cup snow peas, chopped

  • 1/2 - 1 cup peanuts, chopped (amount based on personal preference)

For the dressing…

  • 1/4 cup olive oil

  • 1/4 cup rice vinegar

  • 1 tbs honey

  • 3 tbs sesame oil

  • 1 - 2 tsp soy sauce

Instructions
  • In a large bowl combine all of the ingredients for the soba noodle salad

  • Option to add in additional ingredients like chopped chicken, red pepper, etc.

  • In a mason jar shake all dressing ingredients

  • Pour over salad

  • This keeps very well in the fridge!
