Cornbread Chili

EASY
Punch up your regular pot of chili with this fun trick. It works with any chili, but below is a favorite recipe from a family friend.
Ingredients:
1 tsp. oil
1 (28-oz.) can tomatoes in purée
1 lb. ground turkey
1 can black beans, rinsed
1 cup chopped carrots
1 cup chopped onion
1 can of chopped green chilis
1½ tbs chili powder
1 tsp ground cumin
1 med. zucchini, chopped
2 cloves of minced garlic
Salt & pepper
1 box corn muffin mix (plus ingredients to make it)
Instructions
Grease a 9x13 casserole dish and set it aside
Heat the oil in a large skillet. Add the ground turkey and cook until it’s no longer pink
Remove the turkey and in the same pan add onions, carrots, garlic and zucchini
After about 5 minutes when the veggies have softened, add the turkey back in with the remaining ingredients
Add salt and pepper to taste and simmer for 8 minutes or until thickened.
Remove chili from heat; Transfer to the baking dish.
Mix cornbread batter according to the package instructions
Top chili with large spoonfuls. Bake 25 minutes at 400 degrees until topping is golden
