EASY

Punch up your regular pot of chili with this fun trick. It works with any chili, but below is a favorite recipe from a family friend.

Ingredients:
  • 1 tsp. oil

  • 1 (28-oz.) can tomatoes in purée

  • 1 lb. ground turkey

  • 1 can black beans, rinsed

  • 1 cup chopped carrots

  • 1 cup chopped onion

  • 1 can of chopped green chilis

  • 1½ tbs chili powder

  • 1 tsp ground cumin

  • 1 med. zucchini, chopped

  • 2 cloves of minced garlic

  • Salt & pepper

  • 1 box corn muffin mix (plus ingredients to make it)

Instructions
  1. Grease a 9x13 casserole dish and set it aside

  2. Heat the oil in a large skillet. Add the ground turkey and cook until it’s no longer pink

  3. Remove the turkey and in the same pan add onions, carrots, garlic and zucchini

  4. After about 5 minutes when the veggies have softened, add the turkey back in with the remaining ingredients

  5. Add salt and pepper to taste and simmer for 8 minutes or until thickened.

  6. Remove chili from heat; Transfer to the baking dish.

  7. Mix cornbread batter according to the package instructions 

  8. Top chili with large spoonfuls. Bake 25 minutes at 400 degrees until topping is golden
