Dark Chocolate & Cherry Bars

These Dark Chocolate & Cherry Bars are somewhere in-between a granola bar and a seven layer bar. Feel free experiment with other mix-ins such as chopped nuts, or different dried fruits.

Ingredients:
  • 1 1/2 stick of butter

  • 1 cup packed brown sugar

  • 1/2 cup honey

  • 4 1/2 cups old fashioned oats

  • 4 oz dried sour cherries

  • 1/2 cup flaked coconut

  • 1/2 cup dark chocolate chunks

Instructions
  • Preheat oven to 350 and line an 8x8 pan with parchment paper

  • In a sauce pan, melt the butter, brown sugar and honey until the sugar dissolved and the butter is fully mixed in

  • Add the oats, coconut, and cherries. Stir to combine

  • Remove from the heat and add the chocolate chips, reserving a few to top the bars with

  • Spread mixture into the prepared pan. Top with remaining chocolate chips

  • Bake for 20 minutes; Allow to cool completely before cutting
