Enchilada Skillet

This one-skillet dinner is a favorite in our kitchen! It has all the best parts of enchiladas—soft tortillas, a flavorful filling, and melty cheese—but with a fraction of the effort.

Ingredients:
  • 6 small flour tortillas, cut into strips

  • 1 lb ground beef

  • 1 can pinto beans, drained

  • 1 packet of taco seasoning

  • 1 small white onion, chopped

  • 1 clove garlic, minced

  • 1 1/2 cups enchilada sauce

  • 8 oz jack cheese, shredded

Instructions
  • Cook beef in large skillet until it’s no longer pink

  • Add onion and garlic, cook for an additional 5 minutes

  • Add the beans, seasoning, and enchilada sauce, stir to combine

  • Fold in the strips of tortilla

  • Top with cheese and cover with foil. Leave for about 5 minutes until cheese has melted
