Enchilada Skillet

This one-skillet dinner is a favorite in our kitchen! It has all the best parts of enchiladas—soft tortillas, a flavorful filling, and melty cheese—but with a fraction of the effort.
Ingredients:
6 small flour tortillas, cut into strips
1 lb ground beef
1 can pinto beans, drained
1 packet of taco seasoning
1 small white onion, chopped
1 clove garlic, minced
1 1/2 cups enchilada sauce
8 oz jack cheese, shredded
Instructions
Cook beef in large skillet until it’s no longer pink
Add onion and garlic, cook for an additional 5 minutes
Add the beans, seasoning, and enchilada sauce, stir to combine
Fold in the strips of tortilla
Top with cheese and cover with foil. Leave for about 5 minutes until cheese has melted
