Farro Salad

This is my sister’s Farro Salad. It is famous in our home and a recipe I make often for bringing to the office throughout the week. I love adding kale for some extra greens.
Ingredients:
1 8 oz bag of farro, cooked
1 carton cherry tomatoes
1 baguette
1 bell pepper, diced
1/2 cup mozzarella cheese, diced
1/3 cup Kalamata olives, diced
3 large tbs pesto
1 lemon
Olive oil
Salt & pepper
Instructions
Preheat oven to 350
Line a baking sheet with aluminum foil
In a large bowl toss the bread with olive oil, salt and pepper; do the same with the tomatoes
On one side, place the cubes of bread, on the other side add the cherry tomatoes
Roast the bread and tomatoes for 25 min; keep an eye on them to make sure the bread doesn’t burn
Once the croutons and tomatoes cool, add all ingredients to a bowl and toss
