This is my sister’s Farro Salad. It is famous in our home and a recipe I make often for bringing to the office throughout the week. I love adding kale for some extra greens.

Ingredients:
  • 1 8 oz bag of farro, cooked

  • 1 carton cherry tomatoes

  • 1 baguette

  • 1 bell pepper, diced

  • 1/2 cup mozzarella cheese, diced

  • 1/3 cup Kalamata olives, diced

  • 3 large tbs pesto

  • 1 lemon

  • Olive oil

  • Salt & pepper

Instructions
  • Preheat oven to 350

  • Line a baking sheet with aluminum foil

  • In a large bowl toss the bread with olive oil, salt and pepper; do the same with the tomatoes

  • On one side, place the cubes of bread, on the other side add the cherry tomatoes

  • Roast the bread and tomatoes for 25 min; keep an eye on them to make sure the bread doesn’t burn

  • Once the croutons and tomatoes cool, add all ingredients to a bowl and toss
