Greek Potato Wedges

These Greek Potato Wedges are packed with flavor. A fun twist on a classic!
Ingredients:
3 Russet potatoes, and cut into wedges
1/4 cup olive oil
1 lemon
2 cloves garlic, minced
1 tsp salt
1 tsp oregano
1/2 tsp pepper
1 red bell pepper, chopped
1 small red onion, minced
1/2 cup chopped Kalamata olives
1/2 cup feta cheese, crumbled
Instructions
Preheat oven to 450
In a bowl toss the potato wedges with olive oil, juice from 1/2 of the lemon, garlic, salt, pepper and oregano
Bake for about 30 minutes, flipping halfway through
When the potatoes are tender but not totally crisp, remove them from the oven and top with the pepper, onion, olives and cheese
Bake for another 5 - 7 minutes
Squeeze the remaining lemon juice, and top with more salt before serving
