Greek Potato Wedges

These Greek Potato Wedges are packed with flavor. A fun twist on a classic!

Ingredients:
  • 3 Russet potatoes, and cut into wedges

  • 1/4 cup olive oil

  • 1 lemon

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 1 tsp oregano

  • 1/2 tsp pepper

  • 1 red bell pepper, chopped

  • 1 small red onion, minced

  • 1/2 cup chopped Kalamata olives

  • 1/2 cup feta cheese, crumbled

Instructions
  • Preheat oven to 450

  • In a bowl toss the potato wedges with olive oil, juice from 1/2 of the lemon, garlic, salt, pepper and oregano

  • Bake for about 30 minutes, flipping halfway through

  • When the potatoes are tender but not totally crisp, remove them from the oven and top with the pepper, onion, olives and cheese

  • Bake for another 5 - 7 minutes

  • Squeeze the remaining lemon juice, and top with more salt before serving
