Pantry Pasta Salad

This Pantry Pasta Salad is like the spring twin to my taco casserole. Same flavors — just a little more refreshing. Perfect for dinner and lunch leftovers.
Ingredients:
1/2 lb pasta, cooked and cooled (can sub with rice)
1 can black beans, drained
1 can of yellow corn, drained
1 4oz can of green chilis
1/4 cup olive oil
2 tbs apple cider vinegar
2 tbs mustard
2 cloves of garlic minced
2 tsp ground cumin
Salt & Pepper to taste
Instructions
Combine cooked pasta, beans, corn, and green chilis
Whisk the olive oil, vinegar, mustard, garlic and cumin to make the dressing
Add salt and pepper to taste
Option to top pasta salad with fresh lime and grated cheddar cheese
