Pantry Pasta Salad

EASY

This Pantry Pasta Salad is like the spring twin to my taco casserole. Same flavors — just a little more refreshing. Perfect for dinner and lunch leftovers.

Ingredients:
  • 1/2 lb pasta, cooked and cooled (can sub with rice)

  • 1 can black beans, drained

  • 1 can of yellow corn, drained

  • 1 4oz can of green chilis

  • 1/4 cup olive oil

  • 2 tbs apple cider vinegar

  • 2 tbs mustard

  • 2 cloves of garlic minced

  • 2 tsp ground cumin

  • Salt & Pepper to taste

Instructions
  • Combine cooked pasta, beans, corn, and green chilis

  • Whisk the olive oil, vinegar, mustard, garlic and cumin to make the dressing

  • Add salt and pepper to taste

  • Option to top pasta salad with fresh lime and grated cheddar cheese
