Pinapple Fried Rice

EASY

One of my fiance's favorites, this Pineapple Fried Rice is simple and delicious.

Ingredients:
  • 1 8 oz oz ham steak, diced

  • 1 large bell pepper, chopped

  • 1 bunch scallions, chopped

  • 1 whole pineapple

  • 3 eggs

  • 2 tbsp soy sauce

  • 3 cups cooked rice

Instructions
  • Prepare Carolina Basmati Rice according to package instructions (1 cup of uncooked rice makes 3 cups of cooked rice!) 

  • Prepare the pineapple boat: Using a serrated knife, begin to make a slice off the top side of the pineapple, discard the top half

  • Cut around the side of the pineapple, and then make cubes in a criss cross shape; Remove the pineapple chunks and reserve for the recipe 

  • In a skillet over medium heat, add olive oil, ham and bell pepper 

  • Push the mixture to one half of the pan and add the eggs; scramble until cooked through

  • Add the cooked rice, chopped pineapple and soy sauce; Once everything comes together add back into the pineapple boat!
