Sheet Pan Gnocchi

EASY

When it comes to weeknight dinners I want something easy to make & clean up without sacrificing on flavor. Sheet Pan Gnocchi fits the bill. Just use whatever veggies you have on hand and feel free to throw in some sliced chicken sausage or frozen meatballs for added protein.

Ingredients:
  • 1 package of gnocchi

  • 1 pint of cherry tomatoes

  • 1 zucchini, chopped

  • 2 cloves of garlic, minced

  • 3 tbs olive oil

  • Salt & pepper

  • Optional: grated parmesan & fresh basil

Instructions
  • Preheat oven to 450

  • In a bowl, toss together the tomatoes, zucchini, gnocchi, garlic, and olive oil with a generous amount of salt and pepper

  • Bake for 20 minutes; option to sprinkle Parmesan and broil for another 5 minutes

  • Top with fresh basil before serving
