Stuffed Baked Potatoes

These Baked Stuffed Potatoes are a delicious side dish, but they are also satisfying enough to enjoy the entire meal. Tender potatoes are mixed with sour cream, cheese and chives and then repacked into their crispy skins.

Ingredients:
  • 4 Idaho potatoes, baked (about 1 hour at 400)

  • 1 cup sour cream

  • 1/2 cup heavy cream

  • 2 tbs chives, minced

  • salt and pepper to taste

  • 3 cup shredded cheddar cheese

Instructions
  1. Cut potatoes in half lengthwise.

  2. Scoop out pulp, reserving skins.

  3. Mash potatoes with a fork; add sour cream, heavy cream, chives, cheese, salt, and pepper

  4. Stuff potato skins and bake at 350° for 30 minutes
