Stuffed Pepper Casserole

This Stuffed Pepper Casserole could not be more perfect for busy weeknights!
Ingredients:
1 cup of uncooked rice
Olive oil
1 lb ground chicken or meat of choice
1 small onion, diced
3 bell peppers, chopped
2 cloves of garlic, minced
2 tsp italian seasoning
salt & pepper to taste
1 can diced tomatoes
1 1/2 cups broth
1 cup shredded cheese
Instructions
Preheat oven to 375 and prep a 9x13
Cook turkey in a skillet; Add onion, peppers and garlic
Add Italian seasoning, plus salt & pepper to taste
Add the can of tomatoes
Transfer mixture to a 9x 13 casserole dish; Add uncooked rice and the broth; Mix
Cover with foil and bake for 45 until the rice is tender; Top with cheese and then broil until its bubbly
