Stuffed Pepper Casserole

This Stuffed Pepper Casserole could not be more perfect for busy weeknights!

Ingredients:


  • 1 cup of uncooked rice

  • Olive oil 

  • 1 lb ground chicken or meat of choice  

  • 1 small onion, diced 

  • 3 bell peppers, chopped

  • 2 cloves of garlic, minced

  • 2 tsp italian seasoning

  • salt & pepper to taste 

  • 1 can diced tomatoes

  • 1 1/2 cups broth 

  • 1 cup shredded cheese

Instructions


  • Preheat oven to 375 and prep a 9x13

  • Cook turkey in a skillet; Add onion, peppers and garlic 

  • Add Italian seasoning, plus salt & pepper to taste 

  • Add the can of tomatoes

  • Transfer mixture to a 9x 13 casserole dish; Add uncooked rice and the broth; Mix

  • Cover with foil and bake for 45 until the rice is tender; Top with cheese and then broil until its bubbly
