EASY

Taco Casserole is the perfect cozy weeknight dinner. I like to serve this over tortilla chips, with some fresh guacamole & sour cream.

Ingredients:
  • 1 lb ground beef

  • 2 Tbsp olive oil

  • 1 white onion, chopped

  • 1 clove garlic, minced

  • 1 red pepper, chopped

  • 1 jalapeño, chopped

  • 1 cup Pico de Gallo

  • 1 packet of taco seasoning

  • 2 Tbsp tomato paste

  • 1 can corn, drained

  • 1 can pinto beans, drained

  • 2 cups shredded Monterey Jack cheese

Instructions
  1. Preheat oven to 350° and prepare 9x13 pan with olive oil

  2. Brown ground beef in skillet. Drain fat from the meat, and place in a bowl.

  3. To the same skillet add olive oil, onion, red pepper, garlic, and jalapeño. Season with salt and pepper

  4. Cook for 6-7 minutes, until the onion is translucent.

  5. Add the ground beef, taco seasoning, corn, tomato paste, pinto beans, and 1 cup of the cheese

  6. Pour mixture into prepared baking dish, top with remaining cheese. Bake for 18-20 minutes. Serve over chips.
