Taco Casserole

EASY
Taco Casserole is the perfect cozy weeknight dinner. I like to serve this over tortilla chips, with some fresh guacamole & sour cream.
Ingredients:
1 lb ground beef
2 Tbsp olive oil
1 white onion, chopped
1 clove garlic, minced
1 red pepper, chopped
1 jalapeño, chopped
1 cup Pico de Gallo
1 packet of taco seasoning
2 Tbsp tomato paste
1 can corn, drained
1 can pinto beans, drained
2 cups shredded Monterey Jack cheese
Instructions
Preheat oven to 350° and prepare 9x13 pan with olive oil
Brown ground beef in skillet. Drain fat from the meat, and place in a bowl.
To the same skillet add olive oil, onion, red pepper, garlic, and jalapeño. Season with salt and pepper
Cook for 6-7 minutes, until the onion is translucent.
Add the ground beef, taco seasoning, corn, tomato paste, pinto beans, and 1 cup of the cheese
Pour mixture into prepared baking dish, top with remaining cheese. Bake for 18-20 minutes. Serve over chips.
